7 Quick Meals You Can Make with What’s Already in Your Pantry
We all have those days. You're tired, hungry, and the idea of cooking a “real meal” feels like too much. You don’t want takeout (again), but your fridge looks like it’s judging you.
That’s when the pantry comes in to save the day.
These aren’t fancy recipes. They’re just quiet little meals I’ve turned to when money’s tight, time is short, and I need something warm and decent without leaving the house.
Here are 7 pantry meals I actually make using real ingredients you probably already have.
1. Spicy Peanut Butter Noodles
Boil whatever noodles you’ve got, ramen, spaghetti, soba.
In a bowl, mix a spoon of peanut butter with soy sauce, a splash of vinegar or lime juice, a pinch of sugar, and chili flakes or sriracha.
Toss the noodles in the sauce, add canned carrots or frozen peas if you’ve got them.
It’s like a lazy noodle bowl, but way better than plain pasta with ketchup.
2. Tuna + Chickpea Smash
One can of tuna + one can of chickpeas. Drizzle with olive oil, lemon juice, salt, pepper, garlic powder.
Mash it slightly. Serve on toast, wrap it in a tortilla, or eat straight with crackers.
It’s protein-rich, filling, and not your typical tuna salad.
3. Tomato Soup Pasta
Boil pasta. In a separate pot, warm canned tomato soup with a bit of butter or cream (if you have it), garlic powder, and Italian herbs.
Mix it all together.
Add cheese or nutritional yeast on top. It’s like grown-up Spaghetti.
4. Curry Lentils Over Rice
Cook rice. In a pan, warm canned lentils with curry powder, onion flakes, a splash of broth or water, and a bit of oil.
Add coconut milk if you want it creamy.
Top with hot sauce or plain yogurt.
It’s hearty, super filling, and surprisingly comforting.
5. Fried Rice from the Back of Your Fridge
Use leftover rice or instant rice.
Fry with a bit of oil, soy sauce, onion powder, canned corn or peas, and an egg (if you have one).
Optional: Add sesame oil or sriracha for that “I tried” feeling.
Cheap, fast, and always hits.
6. Crispy Bean Quesadillas
Mash a can of black or pinto beans with cumin, garlic powder, and chili flakes.
Spread on a tortilla with cheese. Fold. Toast in a pan until golden.
Top with salsa or sour cream.
Takes 7 minutes and tastes like a real meal.
7. No-Bake Peanut Butter Oats
Mix quick oats with peanut butter, a drizzle of honey or syrup, cinnamon, and a splash of milk or water.
Chill it or eat it right away.
It’s not glamorous — but it’s sweet, cozy, and fills the gap between “I’m starving” and “I don’t want to cook.”
You Don’t Need Fancy Ingredients to Eat Well
Most of us have more food in our kitchens than we think, we’re just used to thinking we need something new to make something good.
With a little creativity (and no pressure), your pantry can do a lot more than sit there collecting dust.
If you want a little help pulling meals together, I made a printable pantry-friendly meal planner that helps map out your week with what you already have.
You can grab it from The Easy Plate store, no rules, just guidance.
Or if you’d rather someone else do the work for you, I highly recommend the $5 Meal Plan. They send easy weekly meals + a shopping list, and it’s helped me avoid more takeout than I want to admit.
And if you shop online, please don’t forget Rakuten. I signed up using a referral link and got $30 after one Walmart run, now I use it every time. Here’s my link if you want to try it too.
